I’ve been experimenting with lots of new recipes lately and was so excited to recently stumble upon my mother’s Anne of Green Gables Cookbook! It was written by L.M. Montgomery’s granddaughter (how special!) and is filled with recipes from Anne’s beloved story.
I’ve mentioned before that I don’t recall a time in my life when I didn’t know who Anne Shirley was. Anne of Green Gables always makes me feel incredibly nostalgic; it brings me back to sweet moments of watching the Megan Follows movies as a little girl and reminds me of the beautifully illustrated 1980s book covers.
After browsing through the cookbook, I thought it would be fun to make a lemonade version of Anne of Green Gables’ Raspberry Cordial recipe. It turned out absolutely delightful! Follow the recipe below to make a pitcher to share with your kindred spirits!
Anne of Green Gables Raspberry Cordial Lemonade Recipe
Ingredients:
2 cups of frozen raspberries
1 1/4 cups sugar
4 cups boiling water
4 lemons
Directions:
1. Put the frozen raspberries into a saucepan and add sugar.
2. Cook the raspberries and sugar over medium heat, stirring once in awhile, for 20-25 minutes, until all sugar has dissolved.
3. Using a potato masher, mash the raspberries thoroughly.
4. Pour the mixture through a strainer. Discard pulp.
5. Squeeze 3 of lemons and strain the juice. Add to the raspberry juice.
6. Boil 4 cups of water and add to raspberry juice.
7. Chill raspberry cordial lemonade in the refrigerator.
8. Serve with a thin slice of lemon in each glass. You may also add raspberries if you wish!
